I can't speak for oblivion because I didn't get it on launch but fallout 3 on I have been playing them on launch and encountering very little to none as far as game breaking bugs go. The arms could still use some work though as far as camera work goes. They look very... odd right now. But from what I have experienced the game overall has improved a lot since oblivion launched.
All of them, actually. NV was obsidian so doesn't count, f3 crashed every few minutes (not to mention falling through textures, thin man, etc) at random, oblivion terrorized hd's with quick saves (and the npc issues OZA mentioned, and Morrowind - actually didn't have any huge game breaking issues at launch I can remember (well, something npc related, but can't remember specifics).

In any event it's nice to see a strong, mostly bug free launch from them. Bugs or not they make amazingly immersive games.

So far Skyrim is pretty bug free from what I've played, which is a good few hours.

Though, there's been a couple of retarded things happen, like someone has "seen" me steal an item when they're 2 floors away and suddenly there's 6 guards and the residents of the house running up the stairs.

A giant walk through a rock I was jumping over to slow him down, just to kill me in one hit.

Nothing like there was in the last Elder Scrolls games and Fallout games though.

Yeah the psychic guards and people getting trapped in the floor panels are recurring bugs in the series.

It's been around so long (psychic gaurds/shop keepers) it's almost like they want it to be in. 15 years since daggerfall and it's still like that.

So yeah after playing it for roughly 8 hours straight I can conclude that this is miles better than oblivion and morrowind ever were. There is so many good things to say about it and although there are the negatives I still think it is miles ahead of oblivion and morrowind.

Speaking of slaying dragons, this somehow seems appropriate.

It's a pretty good game, but I still prefer dark souls over it. The combat system of Dark souls is just incredible.
