Gurren Legann sounds like a perfect example if you like cheese and romantics. (Two seasons)
Needless fits the bill if you count that little kid as the main character and not Adam Blade, and if you won't be disturbed by how japanese the humor is. (One season IIRC)
The Slayers and G Gundam have a lot of accessory characters that develop like that, but the main character in each started out pretty fucking GAR. (Slayers is about 5 seasons and a handful of movies, G Gundam is five mid-to-full length seasons)
And if you don't mind dubs and delving into the past then Zoids: Chaotic Century was pretty badass. (Two seasons, Century Zero was the only other Zoids arc worth watching, and it isn't nearly as good as CC)
IF you have no social life you can pick one of THE BIG THREE (Naruto, Bleach, One Piece) but be aware that they all get pregressively more terrible as the show progresses and in all reality they didn't really start out that great. They're purely time killers. (They're all well over 15 seasons and probably like 2-5 movies, a good portion of which are filler that you can skip. If you're into skipping filler then Bleach neatly packages them as one-season arcs for you)
You can try Higurashi no Naku Koro ni and kai if you want something that's aimed towards a mature audience and actually takes itself seriously. (Two seasons, the first of which is hilariously depressing, confusing, and hopless and the second one making up for it.)
I would probably know more but I stopped watching anime about the time Umineko train-wrecked.
