Funny, Frisco TX was home of the fighting coons. They changed over the last couple of years though. Lewisville - Fighting farmers.

Old Chicago soccer team was called The Sting...decent name.
Or, go for a bird - Eagles, Hawks, Falcons, Condors...
Wolves, Coyotes, Foxes...
Vipers, Cobras, Rattlers...
Or, go for the national fill-in-the-blank (flower, bird, mammal, herb, blah, blah, blah).
Just some ideas...
